Roaming the streets of Ochio Rios and Kingston, I often encountered the spicy aromas of jerk chicken. Though the chicken is marinated in a jerk sauce, this alone isn’t what gives the chicken it’s unique Jamaican flavour. The chicken is first marinated in a sauce made of allspice berries, thyme, Scotch bonnet peppers, scallions, fresh ginger, and oil. The whole chicken is then cooked directly over charcoal, often produced from fresh green wood. Flavours from the wood and charcoal infuse the chicken with additional oils and fragrances and gives it a smoky taste.
